Strawberry, balsamic, thyme & feta salad

With strawberries in full flow at the farm, it’s time to start getting imaginative with them. This salad is really very simple, but the sweetness of the strawberries is really really good with the tang of the feta and balsamic and the fragrance of the thyme. A good twist of black pepper over the top of the salad is also a really great addition.

2 tablespoons balsamic vinegar
2 tablespoons olive oil
salt and pepper
200g salad leaves
a large handful of ripe strawberries (halved or quartered)
100g feta, broken up into small pieces
1 sprig of fresh thyme

  1. Make the dressing. Put the balsamic vinegar, olive oil and seasoning in a jar then put the lid on and give it a good shake.

  2. Put the salad leaves in a big bowl, pour over some of the dressing and carefully lift and mix the leaves to get them nicely coated in the dressing.

  3. Put a few leaves in a salad bowl. Add a sprinkling of strawberries, feta and individual thyme leaves

  4. Add the rest of the salad leaves to the bowl, then add the remaining strawberries and feta. Drizzle with some extra olive oil and add the remaining thyme leaves.

If you don’t have fresh thyme you could use fresh oregano, mint or basil, for a different but equally tasty salad.
